On the occasion of Mid-Autumn Festival, in addition to the conventional commercially available mooncakes, why not try making a visually appealing and simple purple sweet potato crystal mooncake, adding a unique flavor to the festive season.

This mooncake is known for its translucent appearance, delicate and chewy texture, where the light fragrance of purple sweet potato and sago intertwine, offering a different taste experience during the Mid-Autumn Festival.

Ingredients:
– 1 purple sweet potato
– 100g sago
– Some cold water
– A set of mooncake molds

Steps:
1. Place 100g of sago in a bowl, add some cold water, soak for about 30 minutes. 2. Wash and peel the purple sweet potato, slice thinly, and prepare for steaming. 3. Steam the purple sweet potato slices in a steamer over high heat for about 15 minutes until cooked through. 4. Mash the steamed purple sweet potato into a smooth paste. 5. Check the sago’s soaking status; when it can be easily crushed, knead it into a dough without adding extra water. 6. Divide the purple sweet potato paste into portions of about 20g each; do the same for the sago dough, about 30g each. 7. Take a portion of sago dough, wrap it around the purple sweet potato paste, and carefully shape it into a ball. 8. Use the mooncake mold to press the shaped ball into the desired shape. 9. Finally, steam the shaped mooncakes for another 15 minutes until done.
