“残云收夏暑,新雨带秋岚”,还有几天我们就要和夏季告别了。接下来是什么季节?当然是秋季。尽管这个时候我们还享受不到凉爽的秋风,但是还远吗? 立秋后天气会渐渐地转凉,气候多变、干燥,因此要早早地为身体打算。今年是晚立秋,高温的天气会持续一段时间,身体的损耗也会比以前多。老一辈人总说饮食要顺时而食,建议大家有钱没钱记得吃“5个1”,再也不害怕秋老虎了。 第1瓜:南瓜 南瓜是秋天第一瓜,既可以当主食又可以做成菜食用。秋季的南瓜正是成熟的季节,甜度和粉糯的程度很高,口感也比其他季节好。 ①取出一个贝贝南瓜,挖掉籽,洗干净后切成小块。 ②取出6个小鸡腿,洗干净后剁成小块。 ③锅中烧油,放入鸡腿炒。炒干鸡腿表面的水分后放入生抽、老抽上色。翻炒均匀后放点蒜子、姜片去腥,焖煮一会儿。 ④把南瓜放入锅中,翻炒均匀。 ⑤取出150克的大米,淘洗干净后也倒入锅中,翻炒均匀。 ⑥把电饭煲的底部刷少许的食用油,倒入大米鸡腿南瓜。倒入开水,水深盖过食材即可。按煮米饭键,开始煮。 ⑦电饭煲调到保温状态时,撒少许的盐进去,再撒点葱花拌拌就可以食用了。 第1菜:茄子 “立夏栽茄子,立秋吃茄子”,到了秋天怎么能少得了茄子呢?秋天的茄子又叫秋茄,很柔软鲜嫩,有着猪肉鸡肉无法比拟的味道。 ①取出200克的茄子,削掉蒂部。把茄子洗干净后切成长条,泡在水中,防止氧化发黑。把150克的豆角的头尾都切掉,切成小段,泡在水中10分钟。搓洗几遍,捞出沥干水分。 ②我们把茄子挤干水分,放入碗中。锅中烧油,油温达到6成热的时候放入豆角和茄子炸。茄子的表皮皱巴巴的时候捞出来,沥干油脂。 ③锅中留少许的底油,放入蒜子和辣椒炒香。倒入茄子和豆角,再加点老抽、生抽,开大火炒。 ④倒入少许的盐、味精调味,爆炒几下就可以出锅了。 第1谷:小米 小米有“五谷之首”的美誉,煮粥或者做成小米馒头等深受大家的喜欢。进入秋天后天气干燥,用小米煮点粥喝下去很舒服。 ①取出100克的小米,淘洗几遍,泡在冷水中30分钟。小米泡一泡,煮出来的小米粥比较浓稠一些。 ②把小米连同泡的水都倒入锅中,再加一些水,开大火煮。锅中水开后换成小火煮,中间搅拌几次。 ③等到小米粥煮的浓稠一点的时候关火,放少许的枸杞,焖10分钟就可以吃了。 第1肉:鸭肉 民谚有“入秋吃鸭,身体顶呱呱”的说法,虽然不知道真假,但是无疑说明鸭子在老百姓心目中的地位很高。其实一年四季中鸭肉并没有鸡肉鱼肉受大家欢迎,但是并不影响它作为入秋后第1肉的地位。鸭肉的肉质很紧实,吃起来也不塞牙,可以炖汤,可以红烧,也可以卤汁。入秋后温度依然很高,鸭肉性凉,隔三差五吃一些可以弥补夏季的损耗。 ①取出1只鸭子,剁成小块后放入面粉水中泡一泡。搓洗几遍,确保鸭子表面的杂质都给清洗掉。 ②向锅中倒入菜籽油炒香,放入鸭子炒。炒干鸭子表面的水分,再炒出鸭皮上面的油脂后倒入2勺生抽、2勺老抽、1勺陈醋,翻炒均匀后焖煮3分钟。倒入半罐啤酒,放点蒜子、姜片、葱段去腥,继续焖煮几分钟。倒入1大碗开水,开大火煮开后换成小火焖煮。 ③鸭子的肉能用筷子插进去的时候放入盐调味,继续开小火焖煮10分钟。大火收汁,撒点葱花就可以食用了。 第1白:莲藕 民间说“入秋吃藕,日子乐悠悠”,这个季节的田藕大量上市了。田藕很脆,吃起来比河里的藕要甜,也没有渣。莲藕的水分足,吃起来很舒服。 ①取出350克的莲藕,切掉头尾。把莲藕的皮削掉,搓洗干净。把沥干水分的莲藕切成长条,泡在水中防止氧化发黑。 ②取出半个青红椒,洗干净后切成丝。再取出几个蒜子,洗干净后拍碎。 ③热锅冷油,放入蒜子和辣椒炒香。倒入藕条,开大火炒。 ④藕条断生后加点生抽、香醋、盐调味,爆炒几下就可以出锅了。
