A young mother born in the 2000s showcased the entire process of making homemade red date and walnut fillings through recording baking video logs. She first demonstrated how to wash the red dates, using 200 grams of red dates with a spoon of salt and a spoon of flour, soaking them in water for five minutes, gently rubbing to clean the dirt in the gaps. She also shared a convenient pit-removal tip: using a straw to pierce through the date from one end to the midpoint, then repeating the same from the other end, gently pressing to make the pit fall off.
Next, by mixing the roasted crushed walnuts with date paste evenly, a natural additive-free red date and walnut filling was formed, relying on the natural sweetness of the date paste to achieve its wonderful flavor. In the pre-processing stage, the walnuts were baked in a 110-degree oven for ten minutes until slightly yellow, lightly crushed to retain the grains, adding layers to the filling.
After being steamed, the red dates were put into a food processor, adding a small amount of water to puree them into a fine date paste. Subsequently, the date paste was continuously stir-fried in a non-stick pan until it started to solidify, then slowly pouring in corn oil, adding in two separate times to ensure that each oil portion was fully absorbed by the date paste until the paste became compact and non-stick.
After tasting it, this homemade filling was exceptionally delicious, and she sincerely recommended the audience to try it themselves, believing it would bring a different culinary experience.
