The methods to remove the rancid taste of lard are as follows:

Re-boiling:

Place the lard in a pot and heat it until the lard is completely melted.

During the boiling process, you can add an appropriate amount of white sugar, which not only helps to remove the odor but also eliminates excess moisture.

Add seasoning:

Add a certain amount of seasonings such as peppercorns, star anise, scallions, ginger, etc., into the oil, then re-boil to enhance the flavor and remove the “rancid taste.”

You can also add orange peel, but be careful as frying the orange peel for too long will turn it black and bitter, so it should be removed while it’s still yellow.

Add Vitamin E:

During the boiling process, add Vitamin E in a certain ratio (such as 1 Vitamin E capsule per 400 grams of oil), this will extend the shelf life of the lard.

Storage method:

The prepared lard should be placed in a ceramic pot, and a few pieces of radish should be placed on top of the lard to prevent it from deteriorating.

When storing lard, ensure it is isolated from air, you can seal the lard in a plastic bag and store it at a low temperature.

*Note: If the lard has a rancid taste, it is usually a sign of spoilage, consuming it may have adverse effects on the body, therefore, it is not recommended to consume lard with a rancid taste. If there is mold on the surface of the lard, the lard underneath should not be consumed as there may be mold that is not visible to the naked eye.
