How to make Japanese-style barbecue sauce

Making barbecue sauce is very simple. Take three tablespoons each of soy sauce, oyster sauce, and maltose. Add a small amount of five-spice powder, pepper, two tablespoons of minced garlic, and a tablespoon of wine. Mix with 400 milliliters of water and simmer over low heat until thickened.

Place these ingredients in a pot and simmer on low heat for five minutes. Once cooled, blend into a smooth paste using a juicer.

The unique flavor of hot and sour sauce requires a shallot, two slices of ginger, three cloves of garlic, two green and red chili peppers each, along with soy sauce, sugar, wine, vinegar, a teaspoon each, three teaspoons of bean paste, and half a tablespoon of cornstarch water. Finely chop the shallot, ginger, and garlic, and finely slice the chili peppers after deseeding. Stir-fry the chopped shallot, ginger, and garlic in hot oil until fragrant, then add the bean paste and stir-fry. Mix in the other seasonings and half a cup of water, bring to a boil, thicken with cornstarch water, and finally garnish with chopped green and red peppers for color and flavor.

To prepare sweet and sour sauce, combine half a cup of ketchup, half a cup of white vinegar, half a cup of sugar, half a teaspoon of black vinegar, half a cup of cold water, a teaspoon of cornstarch, and a teaspoon of sesame oil. Place these ingredients in a container, heat over water until the sugar dissolves, let cool, then bottle. A delicious sweet and sour vinegar sauce is now ready.
