Today, I am sharing a homemade purple sweet potato ice skin mooncake, which allows for adjustments in the seasoning amounts based on personal taste. The required ingredients include: 45 grams of glutinous rice flour, 35 grams of sticky rice flour, 20 grams of starch, 185 milliliters of milk, 50 grams of powdered sugar, and 5 purple sweet potatoes. Additionally, 20 milliliters of oil and an adequate amount of condensed milk are needed to adjust the moisture of the purple sweet potato filling.

First, clean the purple sweet potatoes thoroughly, steam them until fully cooked, peel them, and mash them into a paste. If the purple sweet potato paste is too dry, condensed milk can be added to increase moisture and sweetness.

To prevent the mooncake from sticking to the mold, first coat the inside of the mold with a small amount of toasted flour. Next, roll the prepared purple sweet potato filling into small balls, place them in the mold, and press them into shape. Additionally, any excess purple sweet potato paste can be directly shaped using the mold to create small snacks.

When making the ice skin, first mix the milk, oil, and powdered sugar evenly. Then, gradually mix the liquid mixture with the dry ingredients, sift it, let it rest for ten minutes, cover it with plastic wrap, and steam it with a water bath for about half an hour. The use of plastic wrap is to block steam, ensuring the batter’s texture. After steaming, stir it while it is still hot to make the ice skin finer.

When making the mooncakes, divide both the purple sweet potato filling and the ice skin into small portions of 25 grams each. Take a portion of ice skin and wrap it around the purple sweet potato filling, carefully sealing it, and gently rolling it into a ball. It is worth mentioning that if cocoa powder is added during the dry mixing phase, the ice skin will take on a chocolate color, adding a different flavor to the mooncake.
