Before starting, please make sure you have the following ingredients prepared on your work surface: 80 grams of purple sweet potato, 80 grams of glutinous rice flour, 60 grams of wheat starch, 50 grams of icing sugar, 220 grams of water, 20 grams of cooked glutinous rice flour, 20 grams of oil, and 100 grams of glutinous rice flour for dusting. Additionally, you will need 250 grams of ready-made red bean paste filling.

Firstly, wash the purple sweet potato, peel it, and cut it into thin slices, then steam it until soft. Next, mash the steamed purple sweet potato into a fine puree and set it aside (note that you may have some purple sweet potato left over). Take 60 grams of the purple sweet potato puree and mix it with the previously blended dry ingredients to form a dough.

Next, place all the dry ingredients (glutinous rice flour, wheat starch, icing sugar, cooked glutinous rice flour) into a container, and gradually add 220 grams of water while stirring until it forms a smooth, lump-free batter. Then, add 20 grams of oil and continue stirring until fully incorporated. This mixture needs to be heated over low heat while constantly stirring, similar to making rice porridge, until it thickens and becomes difficult to stir, indicating that the batter is cooked.

Once the batter has cooled, you can start making the mooncakes. Take 30 grams of the dough, wrap it around 20 grams of red bean paste filling, and gently roll it into a ball. Then, using a 50-gram mooncake mold, place the wrapped dough into the mold and press it into shape, gently tapping the bottom of the mold to release the mooncake, resulting in a delicate snow skin mooncake.

To enhance the flavor, it is recommended to refrigerate the finished purple sweet potato snow skin mooncakes for a while before enjoying them, as this will not only make the mooncakes’ taste even more delightful but also add a refreshing touch.
