1. After washing the okra, blanch it and then chop off the stems and cut them into small pieces, do the same for the onions and red chilies.

2. Beat the eggs in a bowl, then heat oil in a pan. Once hot, add the beaten eggs and scramble them. Once cooked, set them aside. Heat oil again, stir-fry the green onions until fragrant, add the onions and sauté until fragrant, then add the okra to stir-fry until softened.

3. After the okra is cooked, add the red chili and eggs, season with salt, chicken essence, and light soy sauce. Stir well and it’s ready to serve!
