Today, I will share a special recipe for making flaky five-nut mooncakes. The required ingredients include: 400 grams of cotton candy, 2 eggs, corn, 40 grams of granulated sugar, and 10 grams of lye water. First, use a whisk to quickly beat the sugar for about 5 minutes until it melts. Then, slowly add 585 grams of salad oil, ensuring to pour it in slowly as shown in the video. Next, slowly add 125 grams of water, and remove the whisk after thorough mixing.

At this point, add 1500 grams of flour, 4 grams of baking powder, and 4 grams of baking soda to the mixture. Switch to a dough hook attachment and continue mixing until the dough becomes as soft as shown in the video. Press the dough flat with your hands, then use a mooncake mold to divide it into appropriately sized portions, the exact size can be determined as desired. Next, take a piece of mooncake skin, wrap it around the five-nut filling, and seal it tightly following the technique shown in the video.

Then, place the wrapped mooncakes in the mold for shaping, and gently transfer them to a baking tray. Preheat the oven to 220 degrees Celsius (top heat) and 200 degrees Celsius (bottom heat), then bake for about 13 minutes. By following these steps, you will have a delicious mooncake with a crispy crust and a flavorful filling. A key feature of this mooncake is that both the crust and filling are exceptionally flaky.

It is recommended to arrange 24 mooncakes on each tray to avoid overcrowding, and brush a layer of egg yolk on the surface of the mooncakes to enhance their appearance. This unique mooncake not only tastes wonderful but also has an appealing look.
