Homemade red bean paste mooncakes, no need to buy anymore

Must read

On a whim, I wanted to taste the flavor of mooncakes, and fortunately, my home had all the ingredients, so I decided to make them from scratch. Homemade mooncakes taste as good as store-bought ones. Friends, why not give it a try, too!

The ingredients needed to make mooncakes include: 160g maltose, 230g low-gluten flour, 20g high-gluten flour, 60g peanut oil, 4g alkaline water, and a pack of red bean paste.

The steps to make mooncakes are simple and clear: 1. First, mix maltose, alkaline water, and peanut oil until well combined, then sift in the low-gluten flour, carefully mix into a dough. 2. Next, divide the red bean paste into small 25g balls. 3. Divide the dough into 15g portions, wrap around the red bean paste ball, slowly form into a smooth ball using the palm technique. 4. Use a mooncake mold to press out exquisite patterns. 5. Preheat the oven to 190°C, place the mooncakes in the oven, first bake for 15 minutes. At the 5-minute mark, remove them, gently brush with a layer of egg wash, then continue baking for another 10 minutes. Once done, let the mooncakes cool, store in an airtight bag for two days, and the texture will be smoother. 6. Freshly baked mooncakes may be slightly dry and hard, but they will become more oily and delicious after standing for two days. 7. Pack these handmade mooncakes into beautiful gift boxes, they make great gifts for family and friends.

A few tips for your success: – Peanut oil is the ideal choice for making mooncakes, adding flavor. – Use the folding and flipping method when mixing the dough to avoid gluten formation, which affects the texture. – The resting process after baking should not be ignored, it can make the flavor and texture of the mooncakes more perfect.
