Making traditional flavored mooncakes is quite simple. First, mix the flour with oil, gradually add cold water and stir with chopsticks until well combined, then let the dough rest for 20 minutes. Next, move on to the filling preparation stage.

The filling consists of: 170 grams of crushed peanuts, half in granules and half in powder; 50 grams of ground white sesame; 20 grams of lightly ground black sesame; 50 grams of chopped walnut kernels; and 30 grams of crushed cashews, or other nuts as substitutes. According to personal preference, the types of nuts and the amount of sugar can be adjusted. The filling options are flexible, and luxurious mixed nut or other flavors can be tried.

The processing method for all-purpose flour is unique; it must be steamed first. Place the flour in a steamer, poke holes with chopsticks for ventilation, and steam for about 25 minutes. After that, to remove lumps in the flour, it must be sifted. Mix 250 grams of steamed flour with 160 grams of raw flour, adding 140 grams of peanut oil and mixing well. Gradually add 110 grams of cold water while stirring, until it can be kneaded into a soft dough. Seal it and let it relax for 20 minutes, preparing for wrapping the filling.

Divide the dough into portions of about 70 grams each, wrapping approximately 30 grams of filling tightly. Beginners can appropriately reduce the filling amount for easier handling, as demonstrated in the instructional video.

This retro mooncake is exceptionally delicious, and making it by hand to share with family will surely bring warmth.

Additionally, using a 100-gram wooden mold is not limited to mooncakes; it is also suitable for shaping pastries or steamed buns. Place the dough into the mold and flatten it. After easy unmolding, place it with the patterned side down in a skillet or electric griddle, and cook on low heat for 15 to 20 minutes until both sides are golden brown, indicating completion. Since the filling is pre-processed and the dough is mostly made from cooked flour, it only takes a little over ten minutes to cook thoroughly.
