Main ingredients: 1 small bowl of sweet fermented rice, 3 tablespoons of flour.

Preparation time: about 6 minutes.

Steps:

Step 1, knead the dough. In a bowl, add 1 small bowl of sweet fermented rice, 3 tablespoons of flour, 1 tablespoon of sugar, mix until cotton-like, then knead into a slightly soft dough, brush with cooking oil, cover with plastic wrap and let it ferment until double in size.

Step 2, sealed fermentation. This dough is very sticky, remember to apply cooking oil to your hands. Also, no need to add yeast when kneading the dough because sweet fermented rice is also made by fermentation, it will ferment on its own after kneading into a dough. After about an hour, it will be ready for fermentation.

Step 3, knead. Sprinkle dry flour evenly on the cutting board to prevent sticking, take out the dough, place it on the dry flour, knead and deflate, then divide it into small pieces.

Step 4, fry. Brush the pan with cooking oil, place the small cakes when hot, fry over low heat, fry one side until golden brown, then flip to fry the other side.

Step 5, done. Remember to fry over low heat, don’t rush it, after flipping a few times, the small cakes will turn crispy, swell, add a little boiling water, cook off the moisture, then ready to serve.

Step 6, finished product. The sweet fermented rice small cakes made in this way are softer than baked bread, and especially fragrant. I like them crispy, so I fried them a bit more. If you don’t like them too brown, you can shorten the cooking time.
