When preparing the mooncake skin ingredients, remember to heat the syrup and peanut oil until combined, and then gradually mix in the flour to ensure a smooth batter. However, I made a small mistake and accidentally mixed all the ingredients together at once, which is not the correct procedure.
Next comes the processing of the dried fruits. I chose walnuts, cashews, hazelnuts, almonds, pine nuts, as well as various seeds and sesame, setting the oven to 150℃, and baking them for about 10 minutes to release their fragrance. Then, I chopped the cranberries and raisins and added them to the dried fruits before putting them back in the oven for another 10 minutes until the dried fruits softened slightly. To avoid an overly hard texture, I crushed the larger pieces a bit. My mom thinks this baking temperature is a bit high.
In the following steps, I added chopped raisins, buckwheat flakes, rose jam, and peanut oil, mixing thoroughly to ensure each ingredient was evenly distributed, looking particularly tempting. Then, the low-sugar white lotus paste was slowly incorporated. According to my recipe, every gram of filling is enough to make 45 grams of mooncake.
The ingredients were measured accurately: 43 grams each of walnuts, hazelnuts, almonds, and cashews, a little pine nuts, and 20 grams each of sunflower seeds and pumpkin seeds, with 30 grams each of dried cranberries, raisins, and rose jam added to the mixture.
As for the mooncake skin, I skillfully combined peanut oil with low-sugar white lotus paste, which yields enough to make 12 mooncakes, with each mooncake skin weighing around 30 grams. The secret recipe for the low-sugar mooncake skin includes 128 grams of non-cane sugar syrup, 50 grams of peanut oil, and 3 grams of alkaline water, combined with 190 grams of flour and 10 grams of milk powder—if you don’t have milk powder, you can replace it with an additional 20 grams of flour. In this way, a healthy and delicious low-sugar five-nut mooncake is not far from being formed.
