Instructions:

– Cold Mixed Dragon Beard Cabbage –
Ingredients:
Dragon beard cabbage, carrot, cucumber, red bell pepper, scallions, coriander, vinegar, soy sauce, sugar, salt, cooking oil
Instructions:
1. Wash the dragon beard cabbage and cut it into appropriate lengths. Finely shred the carrot, cucumber, and red bell pepper. Prepare the scallions and coriander.
2. Blanch the cut dragon beard cabbage in boiling water until it changes color, then immediately remove and soak it in cold water for a while to maintain a crispy texture.
3. Put the blanched dragon beard cabbage and shredded carrot, cucumber, and red bell pepper in a large bowl. Add scallions, coriander, vinegar, soy sauce, sugar, salt, and some cooking oil. Mix well, garnish with scallions and coriander before serving.
– Stir-Fried Broad Beans with Eggs –
Ingredients:
Broad beans, eggs, scallions, ginger, garlic, soy sauce, salt, cooking oil
Instructions:
1. Peel and remove the skins from the broad beans, and beat the eggs.
2. Heat a pan with some cooking oil, add chopped ginger and garlic to stir-fry until fragrant. Then add the peeled broad beans and stir-fry until they change color.
3. Pour the beaten eggs into the pan, quickly stir until the eggs are cooked through. Add some soy sauce and salt, continue stirring until the seasoning blends with the ingredients. Serve hot once mixed.
