Introduction: Recently, almost the whole country has experienced severe high temperatures, with heavy rain in many places. The air is humid and damp, undoubtedly fueling the spread of moisture, especially during the “sanfu days.” As the saying goes, “A bowl of soup during sanfu is better than good medicine.” This means that during sanfu, one should drink more soup, which helps the body expel moisture. Today, I will share with you an ingredient that is very suitable for making soup during sanfu – Poria.

Poria is a commonly used Chinese medicinal herb with excellent dampness-expelling properties. It helps the body eliminate excess water and dampness. Poria contains polysaccharides, triterpenoids, and other compounds that have a significant diuretic effect, helping to reduce body swelling. Poria strengthens the spleen and stomach, promotes digestion and absorption of food, and reduces the accumulation of dampness in the body. Here are the wonderful uses of Poria in soup making, so you can try it out:

– Poria Pork Bone Soup –

Ingredients:

500g pork bones, 50g Poria, ginger, scallion, salt, light soy sauce

Instructions:

1. Wash the pork bones, blanch them in hot water to remove blood and impurities, then rinse with clean water. Wash the Poria, cut it into small pieces, and set aside. Slice the ginger and cut the scallion into sections.

2. In a casserole, add enough water, pork bones, Poria, ginger slices, and scallion sections. Bring to a boil, skim off any scum, then simmer over low heat.

3. After simmering for about 2 hours until the pork bones are tender, the soup is slightly white, add salt and light soy sauce to taste, simmer for another 5 minutes to blend the flavors.

4. Remove the pork bones, Poria, ginger slices, and scallion sections from the soup using a strainer, leaving only the broth to consume.

– Poria Chicken Stew –

Ingredients:

Chicken thighs or chicken breast, dried Poria, goji berries, ginger slices, cooking wine, salt

Instructions:

1. Clean and cut the chicken thighs or breast into suitable chunks. Pre-soak the dried Poria in water for about 20 to 30 minutes to soften. Wash the goji berries.

2. In a pot, add enough water (to cover the chicken), ginger slices, and cooking wine. Bring to a boil, then add the chicken pieces.

3. Add the softened Poria and goji berries to the pot. Simmer over low heat for about 1 hour or until the chicken is tender and the Poria is softened.

4. Season with salt 5 minutes before turning off the heat to avoid the chicken becoming tough.
