Steps:

1. Carefully pick the chili leaves, removing old stems, and wash them thoroughly with clean water, then drain the water and set aside.

2. Rinse the pork belly, slice it thinly and evenly, and put it in a bowl.

3. Flatten the garlic with a knife and slice it, then finely shred the ginger for later use.

4. Pour a suitable amount of cooking oil into a pan and heat it over medium heat.

5. Put the sliced pork belly into the pan, stir-fry continuously until the pork belly releases oil and slightly changes color.

6. Add the garlic slices and shredded ginger, continue stir-frying until fragrant.

7. Add an appropriate amount of cooking wine to remove the odor and enhance the aroma, stir well.

8. Then add the washed chili leaves to the pan, turn up the heat and stir-fry quickly.

9. Stir-fry until the chili leaves slightly soften, then add some light soy sauce to color the chili leaves and enhance the flavor.

10. Season with salt according to taste, continue to stir well to fully integrate the salt.

11. Stir-fry for a while longer, ensuring that the chili leaves are cooked through and evenly flavored, then turn off the heat and serve the delicious pork belly stir-fried with chili leaves.

Chili Leaf Egg Pancake

Ingredients: a bunch of chili leaves, 2 eggs, 50g flour, 3g salt, chopped green onions, cooking oil to taste

Steps:

1. Carefully wash the chili leaves, drain excess water in a sieve, then cut them into small pieces with a knife and put them in a large bowl.

2. Crack 2 eggs into the bowl with the chili leaves, add 50g flour, 3g salt, and sprinkle some chopped green onions.

3. Mix the ingredients in the bowl thoroughly with chopsticks until a smooth batter without lumps is formed.

4. Place a flat-bottomed pan on the stove, heat it over low heat, pour in a suitable amount of cooking oil to evenly cover the bottom of the pan.

5. Use a spoon to scoop up a spoonful of batter, slowly pour it into the pan, letting the batter flow naturally into a round shape.

6. Fry slowly over low heat, when one side of the egg pancake solidifies and changes color, carefully flip it over with a spatula and continue frying the other side.

7. Flip it several times to ensure both sides of the egg pancake are golden brown and cooked through, then turn off the heat and transfer the egg pancake onto a plate.

Chili Leaf Lean Pork Soup

Ingredients: chili leaves as needed, 100g lean pork, 3 slices of ginger, chopped green onions, 5g salt, 5ml cooking wine, 3ml light soy sauce, cooking oil to taste

Steps:

1. Rinse the chili leaves thoroughly and set them aside.

2. Wash the lean pork, cut it into thin slices, put them in a bowl, add 5ml of cooking wine and 3ml of light soy sauce, mix well with your hands, marinate for about 15 minutes to allow the pork to fully absorb the seasoning.

3. Pour a suitable amount of cooking oil into a pan over medium heat. After the oil is hot, add 3 slices of ginger and chopped green onions, stir-fry until fragrant.

4. Add the marinated lean pork slices to the pan, stir-fry quickly until the pork slices change color.

5. Add an appropriate amount of water, turn up the heat and bring the water to a boil.

6. After the water boils, reduce the heat and simmer for about 10 minutes to allow the fresh taste of the lean pork to blend into the soup.

7. Then add the washed chili leaves to the pan, continue to cook for 3 to 5 minutes, stirring occasionally.

8. Once the chili leaves soften, season with 5g of salt according to taste.

9. After stirring well, turn off the heat, and serve the delicious chili leaf lean pork soup in a bowl.
