When processed well, they have a crunchy texture, but if not, they can become mushy. However, this cold tossed wood ear mushrooms dish is quite good, and it is very suitable for summer. Soak the wood ear mushrooms until they are rehydrated, blanch them in boiling water for 2 minutes, then mix minced garlic, minced cilantro, vinegar, and soy sauce into a bowl, drizzle with hot oil, and stir well with the wood ear mushrooms.

Stir-Fried Water Spinach

Among leafy greens, I often eat water spinach. On one hand, water spinach has coarse fiber, which provides a sense of fullness and doesn’t make you feel hungry easily. On the other hand, my grandparents grow a lot of them, so they send some over every week. I can’t waste them by throwing them away. Water spinach is very easy to prepare; just stir-fry it with minced garlic for a crisp texture. Water spinach is not only good for weight loss but also has cooling properties.

Having finished discussing vegetable dishes, it’s time to mention meat. There are also tips for eating meat in summer. Eat more white meat and less red meat. White meat includes fish and shrimp, while red meat comprises pork, beef, lamb, and poultry. Since I’m not a fan of fish, chicken has become my first choice. Chicken breast and chicken thighs are both good options due to their low-fat content. Bone the chicken thighs and cut them into cubes, then marinate them in cooking wine and black pepper for 2 hours. Fry them in hot oil until cooked, then set aside. Dice green and red peppers and stir-fry them in the pan for a bit before adding the chicken cubes along with soy sauce and oyster sauce for seasoning. The flavorful double pepper chicken cubes are incredibly delicious to eat. In summer, there’s no need to fear eating meat; just avoid fatty cuts.

After finishing the dishes, having a bowl of soup is perfect, and a homestyle three delicacies soup is very suitable. Once the eggs are fried, add them to hot water to ensure the soup turns a milky white. Once boiling, you can add other vegetables, which can include cabbage, leafy greens, bok choy, enoki mushrooms, oyster mushrooms, shiitake mushrooms, vermicelli, or bean threads. Eggs are a must, and you can add other vegetables based on preference. The three delicacies soup has a fresh and refreshing taste, which helps remove grease and cleanse the palate.
