Scallion Stir-Fried Pig Liver

Ingredients:

500g pig liver, suitable amount of peanut oil, 8 spring onions, 2 slices of ginger, appropriate amount of starch, appropriate amount of salt, appropriate amount of soy sauce

Cooking steps:

1. Cut the pig liver into pieces, soak in water to remove any unpleasant taste

2. After soaking for half an hour, drain the water, add ginger, a small amount of starch, and a pinch of salt – adjust salt to taste (I prefer a lighter taste!)

3. Wash and prepare the spring onions

4. Heat oil in a pan, add ginger, stir-fry until fragrant

5. Add the pig liver, stir-fry for about 5 seconds

6. Add the white part of the spring onions first, stir-fry for about 10 seconds

7. Add the green part of the spring onions, then add the right amount of salt and a little soy sauce. Add more if desired, then stir-fry for about 15 seconds before serving!

There are various types of pig liver, ranging from superior quality like powder liver and noodle liver to lower quality types like rough liver and dead pig liver. It’s best to opt for the former two as they are of better quality.
