Clean the Mandarin fish, marinate with cooking wine to remove the fishy smell. Steam the fish over boiling water, then remove it. Pour out the liquid, add steamed fish soy sauce, and garnish with chopped spring onions, ginger, and coriander. Finish by drizzling hot oil, then serve and enjoy!
