Sauteed Edamame with Water Bamboo Shoots
Ingredients:
3 water bamboo shoots, edamame, half red pepper, salt, a little chicken bouillon, a teaspoon of sugar
Cooking Steps:
1. Prepare edamame, water bamboo shoots, red pepper
2. Boil the edamame in cold water for about 10 minutes
3. Peel the outer skin of the water bamboo shoots, remove the tough ends, and cut them into slanted strips; remove the stem and seeds of the red pepper, and cut into shreds
4. Wash and remove the floating husks of the boiled edamame for later use
5. Heat oil in a wok until 60% hot, stir-fry the water bamboo shoots for about two minutes until they have a brown color

1. When selecting edamame, choose those that are plump as they contain more meat. Avoid flat edamame as they usually lack meat.
