However, for selection, you should choose the tougher-skinned red tomatoes because they contain three times more lycopene than the pink type. Lycopene has a much greater ability to eliminate free radicals compared to other carotenoids and Vitamin E, effectively preventing and treating various diseases caused by aging and decreased immunity.

Once the ingredients are ready, you can start cooking. The method for making tomato pancakes is very simple, but there are many details to pay attention to. First, peel the tomatoes and chop them into small pieces. You can soak the tomatoes in hot water for a while before removing them to make peeling easier. Then, add the washed and diced cilantro, chopped vegetables, and ham. Pay attention to the proportion, with more than 90% tomato pieces and just a small amount of the other ingredients. If you don’t have a mold at home, you can spread the batter directly in the pan, but you need to keep the shape round. Start frying on low heat and only cook one side initially to give it a basic shape. Remove the mold, flip it over to the other side, and continue to shape it. At this point, you must be very careful with the heat; frying on low heat is crucial to prevent the pancakes from burning on the outside while remaining raw on the inside.

Once both sides are browned to a golden color, they can be served on a plate. The fried tomato pancakes are crispy on the outside and soft on the inside, without excessive seasoning, allowing the original flavor of the tomatoes to shine through, being both sour and sweet, quite appetizing. If you’re eating tomatoes to lose weight, besides learning to prepare tomato pancakes, you also need to pay attention to the timing of consumption. Eating tomatoes in the evening can help with weight loss, but don’t eat too late; generally, 6 or 7 PM is best.
