As we enter Major Heat, the hot and stuffy weather often makes people sweat profusely. The loss of sweat can lead to physical weakness and lethargy. Therefore, it’s important to replenish fluids. In addition to drinking plenty of plain water and hot tea, it’s also beneficial to consume some sweet soupy foods daily to maintain good health.

I recommend this sweet soup, Purple Sweet Potato Tremella Lotus Seed Soup. In summer, I eat it several times a week. It is made by stewing purple sweet potatoes, tremella, lotus seeds, and fox nuts together. After cooking, the gelatinous texture of the tremella forms a smooth and thick consistency for the soup. Purple sweet potatoes naturally have a slight sweetness. I don’t prefer overly sweet foods, so I added a small amount of rock sugar, resulting in a smooth and rich taste with a subtle sweetness, incredibly delicious.

Purple sweet potatoes are essential foods for the hot season. They are rich in dietary fiber, selenium, anthocyanins, carotenoids, and other nutrients, which help reduce fatigue, alleviate irritability, detoxify, and promote beauty.

Tremella contains 17 amino acids, with the highest content of glutamic acid and the second highest of aspartic acid. It provides seven of the eight essential amino acids required by the human body, making it a good source of protein. Its effects are similar to bird’s nest but at a lower price, earning it the title of “poor man’s bird’s nest.”

Lotus seeds and fox nuts have many similar functions. Fox nuts can effectively dispel dampness and nourish the spleen and stomach, while lotus seeds can nourish the heart, calm the mind, and help improve sleep quality. When combined, these ingredients have complementary nutritional benefits.

1. Fox nuts are difficult to cook, so they should be soaked for several hours in advance. Then wash and clean the lotus seeds together, and prepare the tremella and purple sweet potato.

2. Peel and wash the purple sweet potato, cut it into small pieces. After soaking the trimmed tremella in water and removing the roots, wash them clean. Prepare the rock sugar.

3. In summer, I use an electric pressure cooker to make this soup. Place the tremella, lotus seeds, and fox nuts in the pot, add 2 large bowls of water.

4. Cover the pot, turn it on, and choose the bean mode to start cooking.

5. When the time is up, add the purple sweet potato and rock sugar to the pot. At this point, do not pressure cook. Simmer for another 5 minutes, then stir well and serve. It’s best to let it cool before drinking in the summer for a more refreshing experience.

Cooking tips: 1. Adjust the amount of rock sugar according to your preference since tastes vary among households.

2. Purple sweet potatoes cook easily, so add them last to prevent them from becoming too soft and making the soup cloudy.
