Autumn is the harvest season for pumpkins, which not only have a cute appearance but are also rich in nutrition, making them a healthy ingredient for all ages. Pumpkins are rich in various nutrients, such as vitamin A, vitamin C, dietary fiber, and minerals, all of which are very beneficial to the body, especially effective for nourishing the liver and detoxifying. As autumn arrives, pumpkins become the star ingredient in my kitchen. Every time I see those golden pumpkins, I cannot help but want to use them to create some delicious pastries.
Both pumpkin and red beans are great health ingredients; when combined, they are not only nutritious but also have an excellent taste. In particular, pumpkin red bean cake not only helps cleanse the liver and detoxify but also allows you to enjoy the deliciousness of autumn. Below I will share the method for making pumpkin red bean cake, so you can easily make this delicious autumn snack at home.
Ingredients: 300 grams of fresh pumpkin, 100 grams of red beans, 200 grams of glutinous rice flour, and 50 grams of rock sugar (can be adjusted according to taste).
Steps: 1. Peel the pumpkin, remove the seeds, and cut it into small pieces. Steam it in a steamer for 20 minutes until the pumpkin becomes soft and sticky. Remove the cooked pumpkin and mash it into pumpkin puree using a fork or blender while it’s still hot.
2. First, wash the red beans and soak them in clean water for 4-6 hours, preferably overnight. After soaking, put the red beans in a pot, add enough water, and boil until the beans are soft and mushy. Then drain the excess water using a sieve. Place the cooked red beans in a blender and blend them into red bean paste for later use.
3. Combine the pumpkin puree and red bean paste together and mix well. Add rock sugar and stir until the sugar completely dissolves. The sweetness of the rock sugar can be adjusted according to personal taste.
4. Gradually add the glutinous rice flour into the pumpkin and red bean mixture while stirring, until the mixture turns into a smooth paste. Be careful not to add too much glutinous rice flour at once to avoid the paste becoming too dry. Grease the inside of the cake mold with cooking oil to prevent sticking. Pour the mixed pumpkin red bean paste into the mold and smooth the surface with a spatula. If desired, sprinkle some red beans or crushed pumpkin on top as decoration.
5. Place the mold in the steamer and steam over medium-low heat for 30-40 minutes until the cake is fully cooked. Insert chopsticks into the center of the cake; if they can be easily pulled out without sticking, the cake is done. Let it cool and demold: After steaming, remove the pumpkin red bean cake and let it cool. Once cooled, gently demold it and cut it into small pieces to enjoy.
