1. Dry-fried King Oyster Mushrooms

Ingredients: 300g king oyster mushrooms; 1-2 red chilies (adjust to personal taste); 3 cloves of garlic; 2 slices of ginger; 1 tablespoon of light soy sauce; 1/2 teaspoon of dark soy sauce (optional); salt to taste; white pepper powder to taste; cooking oil as needed; 1 green onion (optional)

Steps:

1. Prepare the king oyster mushrooms: Wash the mushrooms thoroughly and cut them into strips or thin slices, keeping the thickness uniform for better flavor absorption and even cooking.

2. Prepare other ingredients: Cut the red chilies into diagonal segments or rings, slice the garlic, shred the ginger, and chop the green onion into sections for later use.

3. Fry the king oyster mushrooms: Pour a small amount of cooking oil into the wok; once the oil is hot, add the cut mushroom strips and stir-fry over medium-low heat. King oyster mushrooms have a high water content and will gradually release moisture while stir-frying. Continue to stir-fry until the moisture evaporates, and the surface becomes slightly yellow, dry, and crispy.

4. Add the seasonings: Push the mushrooms to one side of the wok, add a little more oil, then add the shredded ginger, sliced garlic, and chili segments. Stir-fry until fragrant, then mix the mushrooms and seasonings evenly.

5. Season: Add the light soy sauce, dark soy sauce, white pepper powder, and salt to taste, continuing to stir-fry to ensure every mushroom strip is evenly coated and flavorful.

6. Reduce the liquid: Stir until the seasonings are completely absorbed by the mushrooms, the color is even and the aroma is rich, then turn off the heat.

7. Serve: Sprinkle the chopped green onion over the dish, mix well, and serve.
